I think I had some of this soup at a potluck one time, and someone vaguely mentioned how to make it.
It’s not even a recipe, really. Just a few cans of this, and a few cans of that.
But the men in my family can devour a pot of this in no time flat.
It’s that good.
1 lb ground beef or turkey
1/2 pkg taco seasoning*
1/2 pkg ranch dressing mix*
1/2 medium onion, diced
2 cans black beans, rinsed
2 cans corn, drained
1 large can diced tomatoes
(Optional…but not really)
shredded cheddar cheese
Brown the beef or turkey with the diced onions, taco seasoning, and ranch mix. Add the beans, corn, tomatoes, and enough water to cover.
Bring to boil, then reduce and let simmer 45 minutes to an hour.
Serve over corn chips with cheese and sour cream.

*I hate measuring half a package of something, so I usually double the meat, use the entire package, then either freeze half the meat for later, or make the soup with twice the meat.
